Chocolate Chunk Cookies

My easy (and not to brag, but somewhat famous) recipe for chocolate chunk cookies.

Inevitably, every year when the holidays roll around someone asks me to make these chunky chocolate chip cookies. Usually, it’s my husband who eats more than his fair share of them (don’t tell him I said that).

These cookies may have singlehandedly been the reason I was invited to all of the holiday get-togethers, parties, and potlucks. I like to think that perhaps my winning personality also had something to do with it but let’s be real. It was probably the cookies.

One year I really made a name for myself at the office I used to work at and everyone wanted a bite of these. I ended up making 8 dozen cookies that year and they may have singlehandedly been the reason I was invited to all of the holiday get-togethers, parties, and potlucks. I like to think that perhaps my winning personality also had something to do with it but let’s be real. It was probably the cookies.

This has quickly become my go-to Christmas cookie recipe for larger crowds. And I know over the last year with the pandemic upon us we haven’t been able to get together like we used to. But that doesn’t mean I make fewer cookies.

I still make a lot of these chocolate chunk cookies because they make the perfect last-minute gift or neighbourly porch surprise. They also freeze well if Santa leaves a few behind on Christmas Eve.

What truly makes this recipe special are the chocolate chunks. Chunks beat chips any day of the week. But if you don’t have any baking chocolate on hand, don’t sweat it. I’ve made these cookies with a whole lotta chocolate chips when I didn’t have baking chocolate on hand, and I’ve also used both mixed together (as seen in the image above).

That’s the nice thing about this recipe, you can add in mixins and customize as you please. If you prefer butterscotch chips, nuts, or want to get really festive and add something like crushed candy cane, go for it. The cookie is yours to crumble.

Recipe Ingredients

  • 2 cups white granulated sugar
  • 3 cups brown sugar (**if you don’t have it, use white sugar and just make it brown with a dollop of molasses).
  • 4 teaspoons salt
  • 2 cups of melted butter (yep, that’s a whole block of butter).
  • 4 eggs
  • 4 teaspoons vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups baking chocolate chopped into chunks

This amount will make 4 dozen chocolate chunk cookies, that’s a whole lot! If you want to make a smaller batch just make half the amounts listed above. I wouldn’t recommend it though, these cookies are really good and you’ll likely be happy you have many!

Recipe Instructions

1. Start by chopping your baking chocolate (start with one boxed package) into chunks. You won’t need this delicious pile of chocolate until later. You should have at least 2 cups of chunked chocolate ready to go.

2. Grab a large bowl and add 2 cups of white granulated sugar, 3 cups of brown sugar, 4 teaspoons of salt, and 2 cups (one whole package) of melted butter. Whisk it all together until the texture is smooth.

3. Add in 4 eggs and 4 teaspoons of vanilla extract to this mixture and whisk until smooth.

4. Measure out 5 cups of flour and sift into the mixture.

5. Sift in 2 teaspoons of baking soda as well.

6. Mix together with a spatula, but only until incorporated. Too much mixing will result in a cake-like texture.

7. Fold in your chocolate chunks. You may want to do this in two stages depending on how much chocolate you like (personally, I believe you can never have enough chocolate).

8. Once incorporated, cover the bowl with plastic wrap and leave in the fridge for 30 minutes minimum (because you just can’t wait any longer) or up to 24 hours.

9. When you’re ready to bake, preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a sheet with parchment paper or a silicone baking mat.

10. Place 6 cookies on the sheet, about 3 inches apart (they expand quite a bit). If you have a particularly large sheet you may be able to squeeze in 8 at a time.

11. Bake for 12-15 minutes until the edges of the cookies are barely brown. They may still look undercooked but take them out anyway!

12. Leave the cookies on the sheet for another minute and then move to a wire rack to cool.

13. After a few minutes, you’ll notice that the cookies have firmed up and are perfectly chewy, soft, and baked to perfection!

I used Cascade Platinum to clean up after whipping together all of these tasty Christmas desserts because after all that mixin’ the last thing I want to be doing is rinsing a bunch of dishes. It’s my favourite dishwasher detergent because it allows me to skip that step and everything still comes out of the cycle sparkling clean.
